Marc,
You have an impossible task on your hands! If you had only 28 - 35 players
on seven courts, I would suggest that you play four games, no-ad scoring, or
play for e.g 15 minutes and blow a whistle to stop play on all courts.
You never want to have a situation where people on six courts wait,
seemingly forever, while the seventh court is finishing its 'match'.
If you have over a hundred players, the situation is not manageable. Would
you like to be in a situation where you play four games, then wait an hour
to play your next four games?
You have to break it up into several sessions at different time slots, or
find more sites where some groups can play.

Try to change the event, or they will blame you for the inevitable flop!
